Ingredients

The ingredients are:
  • Gingerroot (8 centimeter piece fresh ginger)
  • 200 grams yogurt (natural yogurt)
  • 120 grams cantaloupe (rock melon , chopped/medium diced)
  • 120 grams honeydew melon (chopped/medium diced)
  • 20 grams peppermint (fresh, finely shredded, 2 teaspoons)
  • Peppermint leaves (extra small leaves for garnish)
  • 15 grams crystallized ginger (finely chopped/diced)

How to Make

  • Step 1: Very finely grate the ginger onto a plate.

  • Step 2: Pour the grated ginger and any juices into a fine sieve and press the ginger over a bowl to collect all the juice.

  • Step 3: Stir the juice into the yogurt.

  • Step 4: Divide the melon between 2 serving bowls, top with ginger yogurt.

  • Step 5: Garnish the yogurt with shredded mint and chopped crystallized ginger .
