Step by Step Method
Step 1
Place lamb in large resealable plastic food storage bag.
Step 2
Combine wine, 1/2 cup mint, and garlic in small bowl. Pour over chops. Seal bag tightly; turn to coat. Marinate in the refrigerator at least 2 hours or up to 4 hours, turning occasionally.
Step 3
Prepare grill.
Step 4
Drain lamb, discarding marinade.
Step 5
Pat lamb dry with paper towels.
Step 6
Place lamb in shallow glass dish or on cutting board.
Step 7
Combine mustard and 2 tablespoons mint in small bowl. Spread over meaty side of lamb.
Step 8
Pat bread crumbs, evenly over mustard mixture.
Step 9
Place lamb, crumb side down, on grill. Grill, on covered grill, over medium coals 10 minutes.
Step 10
Carefully turn; continue to grill, covered, 20 to 22 minutes more for medium or to desired doneness.
Step 11
Place lamb on carving board.
Step 12
Slice between ribs into individual chops.
