Step by Step Method
Step 1
Put the bacon pieces in a skillet and cook over medium heat until the bacon just begins to crisp, stir occasionally while cooking.
Step 2
Remove from heat and set aside.
Step 3
Reserve a small amount of the bacon fat to grease skillet.
Step 4
In the meantime, sift dry ingredients together flour, baking powder, sugar.
Step 5
Whisk in cornmeal.
Step 6
Cut in shortening.
Step 7
Add wet ingredients eggs, and milk in a mixing bowl and beat until combined.
Step 8
Heat a bacon greased griddle until hot.
Step 9
Spoon or pour approximately 1/4 cup batter onto griddle for each pancake.
Step 10
Sprinkle bits of cooked bacon on the top of each pancake.
Step 11
Cook until the batter is bubbly, then flip pancake and cook the other side.
