Step 1: Put the bacon pieces in a skillet and cook over medium heat until the bacon just begins to crisp, stir occasionally while cooking.
Step 2: Remove from heat and set aside.
Step 3: Reserve a small amount of the bacon fat to grease skillet.
Step 4: In the meantime, sift dry ingredients together flour, baking powder, sugar.
Step 5: Whisk in cornmeal.
Step 6: Cut in shortening.
Step 7: Add wet ingredients eggs, and milk in a mixing bowl and beat until combined.
Step 8: Heat a bacon greased griddle until hot.
Step 9: Spoon or pour approximately 1/4 cup batter onto griddle for each pancake.
Step 10: Sprinkle bits of cooked bacon on the top of each pancake.
Step 11: Cook until the batter is bubbly, then flip pancake and cook the other side.
