  • 8 ounces bacon, cut into small 1/4 inch pieces (8 strips)
  • 1 1/2 cups cornmeal
  • Dry
  • 2 1/2 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • Cut
  • 1/4 cup shortening
  • Wet
  • 2 eggs
  • 2 cups milk

How to Make

  • Step 1: Put the bacon pieces in a skillet and cook over medium heat until the bacon just begins to crisp, stir occasionally while cooking.

  • Step 2: Remove from heat and set aside.

  • Step 3: Reserve a small amount of the bacon fat to grease skillet.

  • Step 4: In the meantime, sift dry ingredients together flour, baking powder, sugar.

  • Step 5: Whisk in cornmeal.

  • Step 6: Cut in shortening.

  • Step 7: Add wet ingredients eggs, and milk in a mixing bowl and beat until combined.

  • Step 8: Heat a bacon greased griddle until hot.

  • Step 9: Spoon or pour approximately 1/4 cup batter onto griddle for each pancake.

  • Step 10: Sprinkle bits of cooked bacon on the top of each pancake.

  • Step 11: Cook until the batter is bubbly, then flip pancake and cook the other side.
