"These are HUGE cookies and the kids will love to get their little hands on them...adults, too. They are great to take to picnics and gatherings. I used to take them to our Sunday School picnics when my grandkids were little. I even did a double batch for the kids at AWANA. If you notice that there is no flour in the recipe...it is correct...there is no flour. The oats bind it together fine. "

Step by Step Method

Step 1

In a large mixing bowl at medium speed, beat together the first 4 ingredients till light and fluffy; add eggs and vanilla and beat 2 minutes.

Step 2

Blend in baking soda and and oatmeal.

Step 3

Then stir in by hand the remaining ingredients; dough will be very stiff and crumbly.

Step 4

Drop by 1/3 cup measure, 4" apart on an ungreased baking sheet; flatten with a spatula to 3 1/2".

Step 5

Bake in 350 degree oven for 12-14 minutes or till golden; remove and cool on racks.

Step 6

NOTE: If you need more than 22 cookies, you may use a 1/4 cup measure, but they will not be quite as huge as the other one. Still yummy!

I just got done making up a batch of these for my dad. He loves homemade cookies, and I know he is going to love these! I know I can always count on you for good sweets :) The cookies are awesome, and I have had 3 already. If I keep this up I will have to make another batch for my dad!
