Step 1: In a large mixing bowl at medium speed, beat together the first 4 ingredients till light and fluffy; add eggs and vanilla and beat 2 minutes.
Step 2: Blend in baking soda and and oatmeal.
Step 3: Then stir in by hand the remaining ingredients; dough will be very stiff and crumbly.
Step 4: Drop by 1/3 cup measure, 4" apart on an ungreased baking sheet; flatten with a spatula to 3 1/2".
Step 5: Bake in 350 degree oven for 12-14 minutes or till golden; remove and cool on racks.
Step 6: NOTE: If you need more than 22 cookies, you may use a 1/4 cup measure, but they will not be quite as huge as the other one. Still yummy!
