Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

Mix ground chicken, onion, peppers, garlic and taco seasoning in large bowl.

Step 3

Cook the mixture in a large pan with chicken stock until chicken is cooked all the way through.

Step 4

Add more chicken stock as needed.

Step 5

Mix sweet corn and black beans into cooked chicken until beans are soft.

Step 6

In a separate bowl, mix cream of mushroom soup, salsa, cumin and red pepper flakes (to taste).

Step 7

Add the soup mixture to the chicken and stir it in.

Step 8

When finished, pour the chicken mixture into a Pam sprayed 9" x 13" pan.

Step 9

Shred the cheese and put layer of cheese over the chicken, followed by the tater tots.

Step 10

Bake for 50 minutes.
