We love beets, so I knew this would be really good! And it was! Loved the flavors in the dressing and the way they complemented the beets. My only complaint, and it's not the fault of the recipe, is that the colors didn't go well together, so it's not a particularly pretty presentation. The dressing is a dull army green, so not very complementary. I'll try this again with yellow beets and see how it looks. Regardless, these are really tasty and we'll definitely have these again! Although I always have cotija cheese on hand, if you live somewhere where this is difficult - feel free to use crumbled feta. Not quite the same, but close enough.
