Ingredients
- 15 ounces beets, drained, diced (1 can)
- 1/4 cup parsley, minced
- 1/4 cup cilantro, minced
- 2 ounces Cotija cheese, crumbled
- Dressing
- 3 ancho chili's, seeded
- 1 clove garlic, smashed
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1/8 teaspoon salt
- 1/16 teaspoon pepper
How to Make

Step 1: Blend the dressing in blender until just combined.

Step 2: Pour over beets.

Step 3: Put in frig overnight.

Step 4: Add herbs and cheese just before serving.
