Step by Step Method

Step 1

Heat the oil in a heavy-based frying pan. Stir in the onions, pepper and chillies. Cook until they begin to soften.

Step 2

Add the tomatoes and sugar, mixing well. Cook until the liquid has reduced, season.

Step 3

Using a wooden spoon, create 4 pockets in the tomato mixture and crack the eggs into them. Cover the pan and cook the eggs over a low heat until just set.

Step 4

Beat the yogurt with the garlic and season. Sprinkle the Menemen with parsley and serve from the frying pan with a dollop of the garlic-flavored yogurt.

Soooo good! This is going to be a favorite weekend breakfast from now on. We loved the veggie combo and the touch of heat. The eggs were cooked perfectly. This is a company-worthy breakfast but easy enough to do whenever I get the craving. Thanks!

These were very good! Because I'm trying to eat more protein, I made these with 4 eggs for 2 of us. I used fewer peppers and onions than stated, but only had the standard size can of tomatoes and they were a bit much. I will try these again and use a can of Rotel (lol, BK) because it's smaller! Also I will try regular yogurt rather than Greek - it was too dense.

This recipe goes right into my new "Private Favorites". It is delicious. The Yogurt/Garlic topper is the secret ingredient that makes this recipe special. I cut the recipe back to one serving & used fresh tomatoes (last of the season from the garden). Didn't have a red Chile pepper so used a jalapeño. This will be made over & over again. 30 Jun19 . Mde & enjoyed again!!!! n18 Aug 19 I repeat what I said last time. I Just LOVE this recipe
