"I will be posting three Mediterranean appetizers. They go well together or serve separately. This recipe is so easy. Dates with feta cheese. Serve this appetizer at room temperature. The other two recipes are #1054 and #1057. If you wish use fresh basil in place of the mint. Both are equally good."

Step by Step Method
Step 1
Place the mint, feta and pistachios in a mini chopper and chop until finely chopped and well mixed.
Step 2
Spread the dates open and fill with the stuffing mix. Press the stuffing in quite firmly.
Step 3
Close the date so only a portion of the stuffing shows.
Step 4
Serve.
