"My DH loved meatloaf and I have many recipes for it. This was his favorite - the caramelized onions really add a nice flavor. It does make a large loaf and takes some time to prepare it, but it is worth the work!"

Step by Step Method

Step 1

Preheat oven to 350F.

Step 2

Oil 13x9x2-inch roasting pan.

Step 3

Heat 2 tablespoons oil in large nonstick skillet over medium-high heat. Add onions and sugar; saute until onions are deep golden brown, about 15 minutes. Stir in oregano and garlic. Add vinegar; cook until evaporated, about 2 minutes. Transfer to large bowl and cool.

Step 4

Add ground beef, pork, 1 cup crushed tomatoes and next 6 ingredients to onions. Mix with fork until just blended.

Step 5

Form meat mixture into 10-by-5-inch loaf shape in prepared pan.

Step 6

Bake 45 minutes.

Step 7

Spread remaining crushed tomatoes over meat loaf. Drizzle with 1 tablespoon oil.

Step 8

Bake until thermometer inserted into center registers 155F, about 1 hour. Cool 15 minutes.

Step 9

Meanwhile, heat 2 tablespoons oil in large skillet over medium-high heat. Add mushrooms; saute until tender, about 12 minutes. Season to taste with salt and pepper.

Step 10

Cut meatloaf into thick slices.

Step 11

Spoon mushrooms and pan juices over.

This meatloaf is delicious. It definitely takes more time than I usually take to make a meatloaf. I really wondered about the tomatoes on top but they go really well with all the flavors in the meatloaf and you don't miss the fancier toppings.

5 stars for flavor. I have never had much luck doing free-form meatloaf. This one was very "wet" and spread out, and the pan was hard to clean afterwards, so next time I will just cook it in a loaf pan. That being said, it was one of the best meat loaves I have ever made. Loved the onions in this.

I scaled the recipe in half and allowed an hour of cooking time but did end up using a full 400 gram can of crushed tomatoes instead of just over half of it which was maybe a little overkill but what was left in the jar after taking out 1/2 cup to go in the meatloaf would not cover the meatloaf in the tin. The meatloaf itself was fantastic and even on a half recipe I had 4 very generous serves so much so that the DM and I could only get through half a one of ours so it looks like meatloaf sandwiches for lunch which will not be regretted for the meatloaf was delicious. On a personal note the DM and I would rather it without the mushrooms but the DS loved them. The only change I made was to use 1/2K of very lean beef mince (ground beef) and because the DH had ate up all the crackers the night before I had to use dried bread crumbs otherwise all the elements of the dish were there and thoroughly enjoyed.
