Step 1: Preheat oven to 350F. Butter a 1 1/2 quart caserole dish.
Step 2: Boil potatoes until tender, about 12 minutes. Drain and return to pan.
Step 3: Mash with butter, sour cream, onions, 3/4 cup cheese, salt and pepper.
Step 4: Turn mixture into casserole. Sprinkle with remaining cheese and paprika.
Step 5: Bake uncovered for 40 minutes until cheese is bubbling and turning brown.
