  • 1 1/2 pounds potatoes (4 russet, peeled and quartered)
  • 2 tablespoons unsalted butter
  • 1 cup low-fat sour cream
  • 4 green onions (sliced)
  • 1 1/4 cups cheddar cheese, shredded (sharp)
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • Paprika, to taste

How to Make

  • Step 1: Preheat oven to 350F. Butter a 1 1/2 quart caserole dish.

  • Step 2: Boil potatoes until tender, about 12 minutes. Drain and return to pan.

  • Step 3: Mash with butter, sour cream, onions, 3/4 cup cheese, salt and pepper.

  • Step 4: Turn mixture into casserole. Sprinkle with remaining cheese and paprika.

  • Step 5: Bake uncovered for 40 minutes until cheese is bubbling and turning brown.
