"This is from an old booklet put out by the Walla Walla Gardeners Association. Walla Walla is in SW Washington state. Any SWEET onion, such as Vidalia or Maui, will work. Cook time is marinating time."

Step by Step Method

Step 1

Put all ingredients except onions in a saucepan (non-aluminum), cover and simmer for 10 minutes.

Step 2

Separate onions into rings. Place in an oblong baking pan (glass or non-aluminum) or large casserole.

Step 3

Pour hot liquid over onions. Cover and chill at least 4 hours.

Step 4

Drain and serve.

Tisme

This is a really great recipe that I will be using frequently over the coming summer months. Except for using all red onion's, I followed as per recipe, and we really enjoyed this recipe. A combination of sweet and sour combined into one great dish. I served this as one of the side salads to go with our chicken. And we loved it, the only change I would make would to be to cut down on the cinnamon, as the flavor was strong in this dish and could easily take over the taste, but apart from that, this recipe is truly wonderful! This is a lovely light side to serve on a warm day, and one which I intend to use often.
