"What a great way to use up some home-grown tomatoes. My family loves this served with their B-B-Q. If you are having difficulty find the Spanish sherry vinegar, you can use balsamic vinegar."

Step by Step Method

Step 1

Cut tomatoes into half and place in a bowl with onion.

Step 2

Whisk together the oil and vinegar and pour over the tomatoes.

Step 3

Add the salt and pepper to taste and toss salad.

Step 4

Cover and leave about an hour at room temperature, tossing salad occasionally.

Step 5

Just before serving add the basil leaves and toss salad again.

Step 6

Salad is best served at room temperature.

Very refreshing salad on this very hot day! I cut the Roma tomatoes smaller and used a white balsamic vinegar, as we do not have specialty vinegars here in our wee town. Thank you Tisme for a delightful salad that will see many repeats here! Made for Billboard Recipe Tag.

Perfect! Good quality tomatoes, a simple drizzle of olive oil, sherry vinegar, and finished with fresh basil just makes one's heart content. We loved it! This summer while tomatoes are at their best, this will be made again and again. Thanks so much, Tis, for sharing. Made it for Billboard Tag.
