  • 8 (2 pounds) Roma tomatoes
  • 2 small red onion (thinly sliced)
  • 4 tablespoons olive oil (extra virgin)
  • 2 tablespoons sherry wine vinega (Spanish)
  • Salt
  • Fresh cracked black pepper
  • 1/2 cup fresh basil leaves

How to Make

  • Step 1: Cut tomatoes into half and place in a bowl with onion.

  • Step 2: Whisk together the oil and vinegar and pour over the tomatoes.

  • Step 3: Add the salt and pepper to taste and toss salad.

  • Step 4: Cover and leave about an hour at room temperature, tossing salad occasionally.

  • Step 5: Just before serving add the basil leaves and toss salad again.

  • Step 6: Salad is best served at room temperature.
