Step by Step Method

Step 1

Clean mushrooms and set aside. Flatten garlic on cutting board with Chef's knife. For marinade, combine all ingredients except parsley in Dutch Oven. Bring to a boil; reduce heat and simmer 5 minutes. Add mushrooms; simmer, uncovered, 10 minutes. Remove from heat. Let stand until cooled slightly.

Step 2

Transfer mushrooms and marinade to container with tight-fitting lid; cover and refrigerate until ready to serve.

Step 3

To serve, drain marinade from mushrooms. Transfer mushrooms to serving dish. Sprinkle with fresh parsley.

These were very tasty! I used all olive oil and added a lot more garlic (about 3 cloves for a quarter recipe), knowing that that is how I prefer them. They were yummy after just a short period of time (maybe 30 minutes), but then they just kept getting better. I liked the tenderness/bite of them the best the first day, but they were still great the next day too. I added a splash of sherry vinegar to the liquid while nibbling the first hour, and it gave it that Spanish marinated mushroom flavor, which made them even more delicious. I would definitely recommend that. ETA: The first time I had good deli mushrooms after making these I was acutely aware that, although the texture was similar to these after 24 hours, the flavor of the store-bought could not touch these.
