"A delicious and tantalizing muffin recipe using pure canadian maple syrup..ok ok, US in a pinch :) Low fat yogurt should work well and i would substitute the oil with apple sauce to make it more calorie friendly"

Step by Step Method

Step 1

Combined all dry ingredients.

Step 2

Beat together egg, maple syrup, oil and yogurt.

Step 3

Stir in the dry ingredients, just enough to moisten. Fold in nuts and spoon into well greased muffin tins, filling 2/3 full.

Step 4

Bake in 400F oven for 15-20 minutes or until browned.

Daily Inspiration

Made these muffins this morning. Loved that they used yogurt and maple syrup in them. The only change I made was to add pecans vs. walnuts. For some reason, I could not taste the maple syrup at all and while we don't like overly-sweet muffins, these muffins were not sweet at all and could have used either more maple syrup or another sweetener. Will definitely make them again and add additional sweetener next time. : )
