Step by Step Method

Step 1

Heat butter.

Step 2

Saute french shallots and onions.

Lightly season them.

When translucent add bacon and fry.

Add broth, bay leaf and beans that you have tipped and tailed and cut into 1 inch pieces

Simmer 20 minutes covered.

Add potatoes and sausage simmer 20 minutes more covered, adding water if needed.

Step 9

Season to taste.

Step 10

Take out bay leaf.

Step 11

Slice sausage and place on top of soup

Step 12

Place a dollop of sour cream and sprinkle parsley on top.
