Step 1: Heat butter.
Step 2: Saute french shallots and onions.
Step 3: Lightly season them.
Step 4: When translucent add bacon and fry.
Step 5: Add celery and carrots.
Step 6: Add broth, bay leaf and beans that you have tipped and tailed and cut into 1 inch pieces
Step 7: Simmer 20 minutes covered.
Step 8: Add potatoes and sausage simmer 20 minutes more covered, adding water if needed.
Step 9: Season to taste.
Step 10: Take out bay leaf.
Step 11: Slice sausage and place on top of soup
Step 12: Place a dollop of sour cream and sprinkle parsley on top.
