  • 4 tablespoons butter
  • 2 French shallots, minced
  • 4 ounces bacon, diced
  • 1/2 cup onion, diced
  • 1 stalk celery, sliced
  • 1 carrot, sliced
  • 1 pound green beans, sliced
  • 6 cups beef broth
  • 1 bay leaf
  • 2 pounds potatoes, peeled, chopped
  • 8 ounces smoked sausage, whole
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Garnish
  • 2 ounces sour cream
  • 1 tablespoon parsley, minced

How to Make

  • Step 1: Heat butter.

  • Step 2: Saute french shallots and onions.

  • Step 3: Lightly season them.

  • Step 4: When translucent add bacon and fry.

  • Step 5: Add celery and carrots.

  • Step 6: Add broth, bay leaf and beans that you have tipped and tailed and cut into 1 inch pieces

  • Step 7: Simmer 20 minutes covered.

  • Step 8: Add potatoes and sausage simmer 20 minutes more covered, adding water if needed.

  • Step 9: Season to taste.

  • Step 10: Take out bay leaf.

  • Step 11: Slice sausage and place on top of soup

  • Step 12: Place a dollop of sour cream and sprinkle parsley on top.
