Step by Step Method
Step 1
Rinse the lentils.
Step 2
In a large, heavy pot, combine the lentils, broth, onion, celery, carrot, and garlic.
Step 3
Bring to a boil, then reduce the heat to low and simmer covered, until the vegetables are just tender, about 30 minutes.
Step 4
Add the bell pepper, potato, tomato sauce, curry powder, basil, salt, and black pepper to taste.
Step 5
Continue to simmer until potato is cooked, about 15 minutes more.
Step 6
Check seasoning for taste.
