  • 6 cups vegetable broth
  • 1 cup onion, minced
  • 1 stalk celery, minced
  • 1 carrot, peeled, minced
  • 1 garlic clove, minced
  • 1 cup green bell pepper, minced
  • 1/2 pound potato, peeled, diced, (1)
  • 2 cups tomato sauce
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon dried basil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

How to Make

  • Step 1: Rinse the lentils.

  • Step 2: In a large, heavy pot, combine the lentils, broth, onion, celery, carrot, and garlic.

  • Step 3: Bring to a boil, then reduce the heat to low and simmer covered, until the vegetables are just tender, about 30 minutes.

  • Step 4: Add the bell pepper, potato, tomato sauce, curry powder, basil, salt, and black pepper to taste.

  • Step 5: Continue to simmer until potato is cooked, about 15 minutes more.
