Step by Step Method

Step 1

Heat oven to 350.

Step 2

Wash potatoes. Pierce tops of potatoes with fork several times. Do not wrap in aluminum foil.

Step 3

Bake potatoes on oven rack 70-85 minutes, or until tender when pierced. Remove from oven, and cool 10-15 minutes.

Step 4

Meanwhile, in a large bowl, combine all remaining ingredients.

Step 5

Cut a thin slice off top of each potato. Using a teaspoon, scoop out center of each, leaving a thin shell.

Step 6

Add potato centers to cheese mixture. Using fork, break up potatoes, and mix until well blended. Spoon mixture into potato shells. Transfer to baking sheet.

Step 7

Position potatoes under broiler so that tops are 5" from heat source. Broil 4-6 minutes, or until tops are golden brown.

Step 8

Turn off heat, close oven door, and leave potatoes in oven for an additional 7-10 minutes, or until heated through.

I scaled back for 2 serves and though it was side dish it was the star on the plate, absolutely delicious. Thank you LindasBusyKitchen made for Alphabet Tag Game at FF&F.

I could eat these every night of the week. Good thing I have good control! They went perfectly with a chicken dish I prepared for the in laws. Very much enjoyed.

These potatoes were extra special off the grill. Yep, I baked them on the grill. Wrapped them in aluminum foil and pretty much followed what you would do in the oven. I just kept checking them every 10 mins or so to make sure they weren't getting too crispy on the outside. Best to put them over indirect heat. When they were about done, I threw the steaks on. Such a delicious meal. The kids really love bacon and cheese, so they adored these yummy taters!
