"I was looking for a little added flavor in my home fries this morning and created this luscious recipe. They were awesome! I splurged and had them with fried eggs and toast for a delicious weekend breakfast. Great flavor and just a little spiciness from the seasoning. They are really tasty! I cooked these on medium-high, and from the starting of peeling the onion to putting them on my plate was 45 minutes, so if you cook them on high it is going to take less time, and if you cook them on medium it's going to take longer. Medium-high worked perfect for me, as it browned the home fries nicely and didn't scorch the onions! See my picture. If you have a large cast iron frying pan, I would suggest using it, as they make the "BEST" home fries :)"

Step by Step Method

Step 1

In a large cast iron frying pan add olive oil.

Step 2

Fry sliced onions on medium-high, for about 5 minutes and stir often so they don't stick.

Step 3

Push onions to one side of the frying pan, and add raw chopped potatoes. Cook potatoes and onions turning often to brown evenly. When potatoes are a golden brown, mix onions in with potatoes.

Step 4

Add garlic, and mix in with potatoes and onions. Cook for a few minutes.

Step 5

Add Tony Chachere's Creole Seasoning. Mix in with potatoes.

Step 6

Salt and pepper, to taste.

Step 7

Serve.

Delicious, flavorful fried potatoes, and so much tastier than others I have had. Now my go to. I didn't have any issues using my cast iron frying pan. If they start to stick, for heavens sake, just turn the heat down or add a little more oil! Common sense goes a long way!

Made these to have with eggs and toast and they are delicious! So much tastier than plain fried tatters. I didn't use the Tony's as I couldn't find it when I went shopping, but they were still delicious without the heat! Now a staple for my meals!

I made this recipe for two games, "Pick Me !! Tag " & What's On The Menu ? " on 9/14/18. Except for not using the Garlic (used Garlic Powder)& the Creole Seasoning, the recipe was made as it was written ,even right down to the Cast Iron Skillet. ;) . But a few minutes after adding the potatoes , they started to stick. So I transferred them to a non stick skillet and continued browning them. We both enjoyed them very much with our sausage,eggs,and toast. Thanks for posting and " Keep Smiling :) "
