Step 1: In a large cast iron frying pan add olive oil.
Step 2: Fry sliced onions on medium-high, for about 5 minutes and stir often so they don't stick.
Step 3: Push onions to one side of the frying pan, and add raw chopped potatoes. Cook potatoes and onions turning often to brown evenly. When potatoes are a golden brown, mix onions in with potatoes.
Step 4: Add garlic, and mix in with potatoes and onions. Cook for a few minutes.
Step 5: Add Tony Chachere's Creole Seasoning. Mix in with potatoes.
Step 6: Salt and pepper, to taste.
Step 7: Serve.
