Cook the rice according to the packet instructions.
Finely chop all the vegetables (or blitz in a food processor) and place in a bowl and add the lime zest.
Mix all of the dressing ingredients together and set aside.
Add the rice to the vegetables and mix well.
If serving immediately,, add the dressing and stir through, otherwise pour it over just before serving.
