Ingredients

The ingredients are:
  • 250 grams dry brown rice (microwave brown rice & quinoa was specified)
  • 2 shallots
  • Red cabbage (1/4)
  • 2 cups broccoli (stalks and florets)
  • 1/2 cup coriander
  • 1/2 cup basil
  • 1/2 cup mint
  • 1/4 cup sesame seeds
  • 1 cup lettuce, finely chopped
  • 1/4 cup parsley leaf, finely chopped
  • 2 limes, zested
  • FOR DRESSING
  • 2 limes, juiced
  • 1 tablespoon fish sauce
  • 1 teaspoon ginger, crushed
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil

How to Make

  • Step 1: Cook the rice according to the packet instructions.

  • Step 2: Finely chop all the vegetables (or blitz in a food processor) and place in a bowl and add the lime zest.

  • Step 3: Mix all of the dressing ingredients together and set aside.

  • Step 4: Add the rice to the vegetables and mix well.

  • Step 5: If serving immediately,, add the dressing and stir through, otherwise pour it over just before serving.
