"This is a cheap and easy soup found in a 1907 cookbook. You will surprised by the flavor of cooked lettuce. It is not strong in flavor which makes it "right" for any meal . Step by Step Method
Step 1
Chop lettuce.
Step 2
Saute' in a frying pan with the butter, sugar, and vinegar.
Step 3
Stir constantly until lettuce is barely wilted.
Step 4
Add the flour, salt, pepper and the egg. Mix well.
Step 5
Pour in the stock. Bring to a boil, remove from heat.
Step 6
Add the cream. Stir.
Step 7
Serve with the croutons.
