  • 6 cups basic brown stock
  • 1/2 cup cream

How to Make

  • Step 1: Chop lettuce.

  • Step 2: Saute' in a frying pan with the butter, sugar, and vinegar.

  • Step 3: Stir constantly until lettuce is barely wilted.

  • Step 4: Add the flour, salt, pepper and the egg. Mix well.

  • Step 5: Pour in the stock. Bring to a boil, remove from heat.

  • Step 6: Add the cream. Stir.

  • Step 7: Serve with the croutons.
