Lemon & Lime Self-Saucing Pudding

Preheat oven to 180C fan-forced (200C conventional).
Grease a 1.75 litre baking dish.
Combine milk, egg, butter and zests in a large bowl and whisk well to combine and then add flour and a quarter cup of the sugar, whisking until smooth and then pour into a the prepared dish.
Mix cornflour, custard powder and remaining sugar in a small bowl and scatter this mixture over the pudding in the dish.
Combine lemon and lime juice with boiling water in a jug and carefully pour over the pudding mixture.
Bake for 35 minutes, until golden and firm to touch.
Cool slightly and serve warm, dusted with icing sugar and with raspberries and ice-cream is desired.
