Ingredients

The ingredients are:
  • 1/2 cup milk
  • 1 large egg
  • 50 grams unsalted butter (melted)
  • 2 lemons, juice and finely grated zest
  • 2 limes, juice and finely grated zest
  • 1 cup self-rising flour
  • 1/4 cup caster sugar
  • 1 tablespoon cornflour
  • 1 tablespoon custard powder
  • 1 1/2 cup water, boiling
  • Icing sugar mixture, to dust
  • Fresh raspberries, to serve (optional)
  • Ice-cream, to serve (optional)

How to Make

  • Step 1: Preheat oven to 180C fan-forced (200C conventional).

  • Step 2: Grease a 1.75 litre baking dish.

  • Step 3: Combine milk, egg, butter and zests in a large bowl and whisk well to combine and then add flour and a quarter cup of the sugar, whisking until smooth and then pour into a the prepared dish.

  • Step 4: Mix cornflour, custard powder and remaining sugar in a small bowl and scatter this mixture over the pudding in the dish.

  • Step 5: Combine lemon and lime juice with boiling water in a jug and carefully pour over the pudding mixture.

  • Step 6: Bake for 35 minutes, until golden and firm to touch.

  • Step 7: Cool slightly and serve warm, dusted with icing sugar and with raspberries and ice-cream is desired.
