"When I first heard about cod loins...I laughed. Then I researched it. It seems that the fillets from some very large cod are just too big. So they cut out the middle of a filleted cod side and these are the loins. Apparently it is considered to be the best part. Usually you can only find them frozen. If you can not find them, use cod fillets. This is a quick and simple recipe. I served it over a wild rice blend and my Sesame Ginger Bok Choy"

Step by Step Method

Step 1

Preheat oven to 400F.

Step 2

Place fish in single layer in baking dish.

Step 3

Season with salt and pepper; set aside.

Step 4

In small saucepan, heat butter and oil over medium low heat.

Step 5

Add garlic and cook for about 1 minute.

Step 6

Add parsley and lemon juice, remove from heat.

Step 7

Pour over fillets.

Step 8

Bake for 12-14 minutes or until fish flakes with a fork.

A really tasty recipe that we loved and will make this easy recipe over & over again. Just the right amount of lemon juice & garlic. Bake time of 12 minutes was perfect. I had a problem (nothing to do with the recipe) with the cod. I used frozen and they were so infused with water that when thawed they were half the size & weight. Next time I will use fresh.

Very tasty. Got a good deal on fresh cod at Costco, and this was the perfect recipe for it. I may try some fresh basil with it next time.

Made this one right after tagging, already looking to a repeat. Made using fillets. Love how the ingredients came together, especially enjoyed the addition of the Italian parsley one of my favorite herbs. Love fish and this one is to love, enjoyed every bite of a dish that came to the table tasting as good as it looked. Keeper!!

Very good and easy! I used cod fillets (about 1 pound for the three of us) and served with fruit salad for a very easy and good dinner. Think this recipe would also work with almost any kind of fish, adjusting the cooking time as needed. Thanks for sharing!
