"The appearance of this chicken would probably benefit from a little browning prior to baking, but it's not at all necessary for the flavor! Add a little butter to the pan juices and you have a wonderfully tart lemon-garlic sauce. I do not reduce the sauce until syrupy because I like it over rice or noodles."

Step by Step Method
Step 1
Heat small skillet - add olive oil. When oil is hot add garlic and saute 30 seconds. Stir in lemon juice, salt, pepper and bring to boil. Set aside.
Step 2
Arrange cleaned & trimmed chicken in a shallow baking dish prepared with cooking spray. Pour lemon garlic mixture over chicken. Sprinkle with lemon peel. Cover with foil. Bake at 400 degrees for 15 minutes.
Step 3
Remove foil and bake an additional 10-15 minutes or until chicken is cooked through. Remove chicken, keep warm.
Step 4
Pour liquid from baking dish into skillet. Add chicken broth and bring to boil. Cook until reduced and mixture is syrupy. Whisk in butter. Pour sauce over chicken or place chicken in skillet and coat with sauce.
