"This recipe is very satisfying and can be served as a meatless meal or as a side dish. If you like a saucier consistency just add more tomato. The 7 ounces salled for in the recipe is only half of a regular tin of tomatoes. If you can't find the type of tomatoes suggested here just use plain add a stalk of celery, some chopped sweet peppers."

Step 1
Lightly spray a large skillet or wok with oil.
Step 2
Add onions and stir fry for 3 minutes.

Add mushrooms and stir fry additional 3 minutes.

Add leeks and continue cooking for 5 minutes, sprinkle in the basil and chili flakes.
Step 5
Pour in the wine and tomatoes, mix well, season with salt and pepper, continue cooking until heated through.
Step 6
Serve over pasta, sprinkle with parmesan cheese.
