Ingredients

The ingredients are:
  • 3/4 cup chopped sweet onions
  • 1 cup chopped mushrooms (fresh)
  • 2 large leeks (white part only, cleaned, sliced in 1/4 inch rounds)
  • 2 large cloves garlic (chopped)
  • 3 tablespoons fresh basil, chopped
  • 1 teaspoon chili flakes (optional)
  • 7 ounces tomatoes (chunky, the type with pepper celery and onion included)
  • 1/4 cup white wine
  • Salt and pepper, to taste
  • 6 tablespoons parmesan cheese, grated
  • Cooked pasta (of your choice)

How to Make

  • Step 1: Lightly spray a large skillet or wok with oil.

  • Step 2: Add onions and stir fry for 3 minutes.

  • Step 3: Add mushrooms and stir fry additional 3 minutes.

  • Step 4: Add leeks and continue cooking for 5 minutes, sprinkle in the basil and chili flakes.

  • Step 5: Pour in the wine and tomatoes, mix well, season with salt and pepper, continue cooking until heated through.

  • Step 6: Serve over pasta, sprinkle with parmesan cheese.
