Step 1: Lightly spray a large skillet or wok with oil.
Step 2: Add onions and stir fry for 3 minutes.
Step 3: Add mushrooms and stir fry additional 3 minutes.
Step 4: Add leeks and continue cooking for 5 minutes, sprinkle in the basil and chili flakes.
Step 5: Pour in the wine and tomatoes, mix well, season with salt and pepper, continue cooking until heated through.
Step 6: Serve over pasta, sprinkle with parmesan cheese.
