Step by Step Method
Step 1
Prepare a baking sheet, lightly spray with cooking spray.
Step 2
In a medium sized shallow bowl, whisk together eggs, hot sauce and worcestershire and set aside.
Step 3
In a bowl, mix until well combined, the flour, cornstarch, seasoned salt, paprika, cayenne pepper, black pepper, garlic powder and onion powder. Place the flour mixture into a deep bowl.
Step 4
First, dip/coat each piece of chicken into egg mixture, then coat into seasoned flour mixture thoroughly coating each piece thoroughly. Transfer to a plate and allow the coated chicken to rest for 10-12 minutes.
Step 5
In the meantime pour oil in a skillet to about 1-inch high, allow to heat until medium-hot. Also preheat your oven to 350 degrees F.
Step 6
Here's a tip to know when the oil is ready, toss a pinch of flour in the oil and if it began to fry and sizzle, the oil was ready.
Step 7
Fry the coated chicken pieces about 3 minutes each side, careful so that not to burn the skin, the total cooking time is about 6 minutes or until LIGHT golden brown (watch it doesn't get to brown or it will taste burnt! you may need to reduce the element heat). Transfer to prepared baking sheet, skin-side facing up.
Step 8
Bake until the chicken is completely cooked, about 40 minutes (depending on how large your chicken thighs are, legs will take less time).
Step 9
Serve chicken as soon as possible. DELICIOUS!
