Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Set oven rack to second-lowest position.

Step 3

Grease a 6 jumbo muffin tins.

Step 4

For streusel; in a bowl bowl combine the brown sugar with flour and cinnamon; using fingers blend in the cold butter until mixture is like coarse crumbs; set aside.

Step 5

In a medium bowl combine the flour with baking powder, baking soda and salt.

Step 6

In a large bowl beat together butter with applesauce, sugar, eggs and vanilla until smooth and no sugar granules remain (about 3 minutes).

Step 7

Stir in grated apples.

Step 8

Using a wooden spoon or a spatula gradually blend in the flour mixture just until combined (do not over mix the batter).

Step 9

Spoon half of the batter between the muffin tins (I use about 2 heaping tablespoonfuls for each jumbo muffin tin) then spoon half of the streusel mixture over the batter.

Step 10

Spoon remaining batter over the streusel then top with remaining streusel.

Step 11

Bake 30 minutes in the preheated oven or until muffins test done.

Step 12

Allow to sit 5 minutes before removing muffins from pan.

My granddaughter came for a visit and I made these muffins for us. We loved them! I used Macintosh apples, which were more on the tart side. Made a delicious breakfast for us. Loved the topping, making them extra special!

Wow! are these good. I would give them more stars if I could. I followed the instructions as directed, even coarse-grating the apples. The only difference was that I made twelve of them instead of six, but only one recipe. I thought that because hubby and I are trying to be healthier eaters, I would not make a double muffin (smile), but when cooled a tad, I proceeded to eat two of them, so I could have made double ones. Oh, well! They are delicious and I will make them again, maybe in a few days. My house smelled like a wonderful bakery when I took them out of the oven. Wow! again.

MeganMuffins

I usually make several muffins on Sunday's for the week, and then freeze some for later on. I grated the apples and took liberty in adding chopped walnuts to the topping, coming out exceptionally well. I loved that they were so moist and didn't crumble as I bit into it. This will be one of the several new muffins I will make again for my family. My son just got finished eating one and said they are 'licious'.
