Ingredients

The ingredients are:
  • 2 cups all-purpose flour
  • 1 1/4 teaspoons baking powder (or 1 semi-heaping teaspoon)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1/4 cup applesauce (sweetened or unsweetened)
  • 1 cup granulated sugar (white)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 apples, coarsely grated (medium apples)
  • FOR STREUSEL
  • 3/4 cup brown sugar, packed
  • 2 tablespoons all-purpose foour
  • 1 to 1 1/2 teaspoons ground cinnamon
  • 2 tablespoons butter (cold, cut into chunks)

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Set oven rack to second-lowest position.

  • Step 3: Grease a 6 jumbo muffin tins.

  • Step 4: For streusel; in a bowl bowl combine the brown sugar with flour and cinnamon; using fingers blend in the cold butter until mixture is like coarse crumbs; set aside.

  • Step 5: In a medium bowl combine the flour with baking powder, baking soda and salt.

  • Step 6: In a large bowl beat together butter with applesauce, sugar, eggs and vanilla until smooth and no sugar granules remain (about 3 minutes).

  • Step 7: Stir in grated apples.

  • Step 8: Using a wooden spoon or a spatula gradually blend in the flour mixture just until combined (do not over mix the batter).

  • Step 9: Spoon half of the batter between the muffin tins (I use about 2 heaping tablespoonfuls for each jumbo muffin tin) then spoon half of the streusel mixture over the batter.

  • Step 10: Spoon remaining batter over the streusel then top with remaining streusel.

  • Step 11: Bake 30 minutes in the preheated oven or until muffins test done.

  • Step 12: Allow to sit 5 minutes before removing muffins from pan.
