Step 1: Preheat oven to 350 degrees F.
Step 2: Set oven rack to second-lowest position.
Step 3: Grease a 6 jumbo muffin tins.
Step 4: For streusel; in a bowl bowl combine the brown sugar with flour and cinnamon; using fingers blend in the cold butter until mixture is like coarse crumbs; set aside.
Step 5: In a medium bowl combine the flour with baking powder, baking soda and salt.
Step 6: In a large bowl beat together butter with applesauce, sugar, eggs and vanilla until smooth and no sugar granules remain (about 3 minutes).
Step 7: Stir in grated apples.
Step 8: Using a wooden spoon or a spatula gradually blend in the flour mixture just until combined (do not over mix the batter).
Step 9: Spoon half of the batter between the muffin tins (I use about 2 heaping tablespoonfuls for each jumbo muffin tin) then spoon half of the streusel mixture over the batter.
Step 10: Spoon remaining batter over the streusel then top with remaining streusel.
Step 11: Bake 30 minutes in the preheated oven or until muffins test done.
Step 12: Allow to sit 5 minutes before removing muffins from pan.
