"I threw this recipe together after my husband asked for breaded chops and I was out of gluten free bread crumbs. I rooted through the pantry and found a bag of ketchup chips and thought, why not? It turned out quite nicely and we both enjoyed it. I cooked mine in a cast iron skillet on the grill but this can easily be done on the stove top. To make this gluten free, make sure you use gluten free potato chips."

Step by Step Method
Step 1
Place the potato chips and basil in a food processor and pulse until finely ground.
Step 2
Mix with garlic powder, salt and pepper in a large plastic freezer bag; add the chops and toss to coat.
Step 3
Drizzle enough oil to coat the bottom of a skillet; bring to medium-high heat and add the chops.
Step 4
Cook until you have a nice crust over the chops and they are cooked through and no longer pink on the inside; this will depend on thickness of chops.
