Step 1

Mix mayonnaise and lime juice in a small bowl until combined.

Step 2

Toss chicken, celery, onion, bell pepper, cilantro, and jalapeños in a large bowl.

Add the mayonnaise mixture and toss until evenly coated.

Season with pepper to taste.

Step 5

Serve or cover and refrigerate for up to 2 days.

Yum! This was a really nice change from the norm...I wasn't sure how to serve it so I made dienia b's http://www.recipezazz.com/recipe/bacon-pepper-jack-jalapeno-scones-19887 for a delicious sandwich...but I bet this would be great on a salad...I have some leftovers so I'll give it a try...made for "Bill Board" tag game...

Yummy!!! I made the chicken salad, and then made it into a panini with cheddar cheese an avocado.

We really enjoyed this variation on chicken salad. The flavors were wonderful, and the jalapeno added a great bite. The variety of veggies added a lot of texture, crunch, and color, making it an all-around appealing dish. Thanks for sharing! CQ2
