Step 1

Cook bacon add jalapenos on side

Step 2

Cook bacon until crisp crumble

Step 3

Cook jalapenos until tender

Step 4

In bowl mix up filling divide in 1/4 ths

Adding bacon and jalapeno peppers

Microwave until soft not melted

Mix up egg mixture

Seasoning to taste

Heat butter in skillet a tablespoon at a time

Make omelet 1/4 egg mixture At a time

Adding 1/4 of filling

Flip one side over and top with jalapeno jack cheese

Cover to melt if just making one

Cook each one and keep warm in oven on cookie sheet until done

This was really good. My filling was a little thick and didn't melt very quickly so after I added some shredded pepper jack on top, I covered it with a lid to melt all of the cheeses more. I probably would have put it in the oven for a few minutes but it's on the fritz right now. Sigh. Thanks for sharing a recipe that I enjoyed and will make again, Dee.
