"I first saw jackfruit on a food-truck television show, and they were using it in place of chicken. I had not heard of jackfruit before, and finally found some canned young jackfruit in an Oriental market. It really does look like, and have the texture of, chicken meat and makes a wonderful meatless chicken salad. This recipe is a basic chicken salad recipe. You could use any chicken salad recipe with a variety of ingredients. Cook time refers to refrigerator time."

Step by Step Method

Step 1

Drain jackfruit and rinse with water.

Step 2

Using two forks, shred jackfruit until it resembles shredded chicken.

Mix jackfruit, chopped vegetables, mayonnaise, and seasonings together in a bowl.

Step 4

Cover and refrigerate for 2 hours (optional, but flavors blend better with time).

Step 5

Use as you would any chicken salad.
