"Lovely reipe for Brunch or a light dinner. I have used Hot Italian sausage but you choose your favorite Mild, Medium or hot. It is a hearty recipe for one. If you wish add one more egg and serve 2. This is very nice served on toasted Italian bread (ciabatta or other white). Season with salt & Pepper"

Step by Step Method
Step 1
Add milk to eggs; beat well.
Step 2
Stir in the Italian spice and set aside. Cook the Italian sausage. Remove fat from pan.
Step 3
Add the tomato and onion to the skillet. Stir the mixture around and cook for a couple of minutes.
Step 4
Add eggs,let them settle a bit. Gently stir the set egg until all are cooked.
Step 5
Sprinkle with cilantro.
Step 6
Season with salt & pepper & serve on toast.
