Ingredients

The ingredients are:
  • 2 large eggs
  • 4 tablespoon 2% milk (or cream)
  • Spice blend (1/2 teaspoon Italian blend)
  • 1 Italian (3 ounce) sausage (1 hot Sausage, sliced into 1/4 inch pieces)
  • 2 ounces tomato (1/2 roma tomato, chopped)
  • 6 tablespoons chopped onion (sweet onion, finely chopped)
  • 4 tablespoons cilantro (optional)
  • Salt & Pepper as desired

How to Make

  • Step 1: Add milk to eggs; beat well.

  • Step 2: Stir in the Italian spice and set aside. Cook the Italian sausage. Remove fat from pan.

  • Step 3: Add the tomato and onion to the skillet. Stir the mixture around and cook for a couple of minutes.

  • Step 4: Add eggs,let them settle a bit. Gently stir the set egg until all are cooked.

  • Step 5: Sprinkle with cilantro.

  • Step 6: Season with salt & pepper & serve on toast.
