Step by Step Method
Step 1
In a large stock pot, heat the olive oil over medium heat.

Cook onions and Italian sausage in oil until translucent, stopping before they brown.

Add celery, carrots, and garlic, add a pinch of salt and thyme.

Stir well.

Cook 7 minutes longer.
