Step by Step Method

Step 1

In a skillet over medium-high heat heat the oil and then add the sausage and cook for about 10 minutes, turning occasionally. Stir in shallots and garlic and cook another 30 seconds. Stir in broth and bring to a boil; reduce heat and simmer, covered for 5 minutes.

Step 2

Add both beans and return to a simmer; cover and cook for 5 minutes or until done.

Step 3

Stir in tomatoes and parsley.

The combination of veggies, beans, along with broth and sausages, made for a successful meal that not only was it tasty, but packed full of those healthy veggies. I rendered the sausage firsthand over a stovetop grill to release any extra fat from the sausages before adding to the skillet, saving us on some calories. Also, added some Old Bay seasoning, to pump of the flavor of the sauce that went excellent over rice. Quick to make, perfect for a weeknight! Thank you, ellie, for sharing. Made it for Billboard Tag game.
