  • 1 tablespoon olive oil
  • 4 (1 pound) Italian sausages (this is about 4 sausages)
  • 2 shallots, peeled and sliced (1/2 cup)
  • 1 tablespoon garlic, minced (about 6 garlic cloves)
  • 2 cups chicken broth
  • 12 ounces green beans, trimmed
  • 1 can (15 ounce) white kidney beans (cannellini beans, rinsed and drained)
  • 8 ounces cherry tomatoes (halved)
  • 1/2 cup parsley, chopped

How to Make

  • Step 1: In a skillet over medium-high heat heat the oil and then add the sausage and cook for about 10 minutes, turning occasionally. Stir in shallots and garlic and cook another 30 seconds. Stir in broth and bring to a boil; reduce heat and simmer, covered for 5 minutes.

  • Step 2: Add both beans and return to a simmer; cover and cook for 5 minutes or until done.

  • Step 3: Stir in tomatoes and parsley.
