Step by Step Method

Step 1

Cook pasta in heavily salted boiling water until al dente, drain saving 1/2 cup pasta water.

Step 2

Season salmon lightly with salt pepper and paprika.

Step 3

In a skillet, add butter and olive oil and sear the seasoned salmon on both sides and remove from pan. Let the halfway cooked salmon rest under tented foil.

Step 4

Add onions to the pan and cook until opaque.

Step 5

Add tomato paste and cook for a minute.

Step 6

Add chicken broth to the pan and scrape up remaining seasoning from the salmon.

Step 7

Once the liquid has heated through, add pasta to the sauce with 1/2 cup of the hot pasta water.

Step 8

Add tomatoes and cook until tight.

Step 9

Add two tablespoons of butter to the sauce stir until thickened.

Step 10

Add salmon back into the pan and simmer until salmon is just cooked through.

Step 11

Break apart so everyone gets some.

Step 12

Garnish with parsley and season to taste.
