Ingredients

The ingredients are:
  • Pasta
  • 8 ounces penne pasta, dry
  • 6 cups water, boiling
  • 1 teaspoon salt
  • Sauce
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/2 cup onions, minced
  • 8 ounces salmon
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon tomato paste
  • 1/4 cup chicken broth
  • 15 ounces cherry tomatoes (1 can)
  • 2 tablespoons butter
  • 1 tablespoon parsley ,minced

How to Make

  • Step 1: Cook pasta in heavily salted boiling water until al dente, drain saving 1/2 cup pasta water.

  • Step 2: Season salmon lightly with salt pepper and paprika.

  • Step 3: In a skillet, add butter and olive oil and sear the seasoned salmon on both sides and remove from pan. Let the halfway cooked salmon rest under tented foil.

  • Step 4: Add onions to the pan and cook until opaque.

  • Step 5: Add tomato paste and cook for a minute.

  • Step 6: Add chicken broth to the pan and scrape up remaining seasoning from the salmon.

  • Step 7: Once the liquid has heated through, add pasta to the sauce with 1/2 cup of the hot pasta water.

  • Step 8: Add tomatoes and cook until tight.

  • Step 9: Add two tablespoons of butter to the sauce stir until thickened.

  • Step 10: Add salmon back into the pan and simmer until salmon is just cooked through.

  • Step 11: Break apart so everyone gets some.

  • Step 12: Garnish with parsley and season to taste.
